Free Range Pork!

Barbecue Pulled Pork Sandwich

For the spice rub:
1 1/2 tbsp each brown sugar and chipotle chili pepper
1/2 tbsp black pepper
1 tsp dried oregano
1/8 tsp cayenne - more or less to taste

For the sandwiches:
3 to 4 pound pork roast, trimmed
3/4 cup of your favourite barbecue sauce, divided
1/4 cup low-sodium chicken broth
Crusty rolls, cut in half - I find ciabatta rolls work well
Shredded lettuce

Combine spices and rub over pork roast.  Put chicken broth and 1/4 cup of barbecue sauce in slow cooker and place pork on top.  Cover and cook until fork tender on high for 5 to 6 hours or low for 7 to 8 hours. 
Transfer pork to platter and shred with two forks; pour juice into container and cool - skim off fat.  Return pork to slow cooker and add remaining barbecue sauce and a bit of the cooking juice.  Heat through.
Serve on rolls with lettuce.
