Double Smoked Ham

2 cups apple, hickory or oak wood chips
1 ham
1/2 cup plum jam
1/2 cup Dijon-style mustard
1/4 cup cider vinegar
2 cloves garlic, minced
1/2 tsp cayenne pepper

Soak wood chips for 1 hour before using.

For glaze, combine jam, mustard, vinegar, garlic and cayenne pepper

Place the ham on a grill over a drip pan and grill for 45 minutes.  Brush with some of the glaze and cook for another 30 minutes or until a meat thermometer inserted in the centre registers 140 F
