Pulled Pork Sandwiches With Root Beer Barbeque Sauce

Ingredients
  • 1 (2 1/2 to 3 pound) pork roast
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 tablespoon oil, vegetable or canola
  • 2 medium onions, cut into thin wedges
  • 1 cup Root Beer
  • 6 cloves garlic, minced
  • 3 cups Root Beer (two 12 oz cans or bottles) - do not use diet root beer
  • 1 cup bottled chili sauce
  • 6 to 8 dashes hot peeper sauce (optional)
  • 8-10 kaiser rolls
Instructions
  1. Trim fat from meat, if necessary cut in half to fit into slow cooker
  2. Sprinkle meat with salt and pepper
  3. In a large skillet, heat oil and brown meat on all sides, transfer meat to slow cooker
  4. Add onions, 1 cup of Root Beer and garlic
  5. Cover and cook on low for 8-10 hours or high for 4-5 hours
Sauce
  1. In a medium saucepan, stir together 3 cups Root Beer and Chili Sauce
  2. Bring to boil, reduce heat, simmer uncovered for about 30 minutes or until mixture is reduced to 2 cups, stirring occasionally
Sandwiches
  1. When meat is done, transfer to cutting board, using two forks, pull meat apart into shreds
  2. Serve on buns with lettuce and tomato and Root Beer Barbecue Sauce on the side or drizzled on top
