Pulled Pork Sandwiches With Root Beer Barbeque Sauce
Ingredients
- 1 (2 1/2 to 3 pound) pork roast
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 tablespoon oil, vegetable or canola
- 2 medium onions, cut into thin wedges
- 1 cup Root Beer
- 6 cloves garlic, minced
- 3 cups Root Beer (two 12 oz cans or bottles) - do not use diet root beer
- 1 cup bottled chili sauce
- 6 to 8 dashes hot peeper sauce (optional)
- 8-10 kaiser rolls
- Trim fat from meat, if necessary cut in half to fit into slow cooker
- Sprinkle meat with salt and pepper
- In a large skillet, heat oil and brown meat on all sides, transfer meat to slow cooker
- Add onions, 1 cup of Root Beer and garlic
- Cover and cook on low for 8-10 hours or high for 4-5 hours
- In a medium saucepan, stir together 3 cups Root Beer and Chili Sauce
- Bring to boil, reduce heat, simmer uncovered for about 30 minutes or until mixture is reduced to 2 cups, stirring occasionally
- When meat is done, transfer to cutting board, using two forks, pull meat apart into shreds
- Serve on buns with lettuce and tomato and Root Beer Barbecue Sauce on the side or drizzled on top
